Banana Bread

It’s half-term AND Real Bread Week—so what better time to get the kids in the kitchen and bake something delicious? Banana Bread is a Rethink Food favourite, and it’s the perfect way to use up overripe bananas, reduce food waste, and enjoy a sweet, healthy treat!

Ingredients

  • 100g Softened Butter
  • 175g Caster Sugar
  • 2 Eggs
  • 2 Ripe Banana's
  • 225g Self-raising Flour
  • 1 tbsp Baking Powder
  • 2 tbsp Milk

Notes

  • Lightly grease a loaf tin and line it with non-stick baking parchment.
  • Preheat the oven to 180°C/350°F/Gas Mark 4.
  • Measure all the ingredients into a mixing bowl and beat for about 2 minutes until well blended.
  • Spoon the mixture into the tin and level the surface.
  • Bake for about 1 hour until well risen and golden brown.
  • Let it cool, slice it up, and enjoy!
