Banana Bread
It’s half-term AND Real Bread Week—so what better time to get the kids in the kitchen and bake something delicious? Banana Bread is a Rethink Food favourite, and it’s the perfect way to use up overripe bananas, reduce food waste, and enjoy a sweet, healthy treat!
- 100g Softened Butter
- 175g Caster Sugar
- 2 Eggs
- 2 Ripe Banana's
- 225g Self-raising Flour
- 1 tbsp Baking Powder
- 2 tbsp Milk
- Lightly grease a loaf tin and line it with non-stick baking parchment.
- Preheat the oven to 180°C/350°F/Gas Mark 4.
- Measure all the ingredients into a mixing bowl and beat for about 2 minutes until well blended.
- Spoon the mixture into the tin and level the surface.
- Bake for about 1 hour until well risen and golden brown.
- Let it cool, slice it up, and enjoy!
